Slow roasted shoulder of lamb on Easter Sunday

Easter is my favourite holiday of the year! Not because lots and lots of chocolate is involved (though that does help I admit), not because of Jesus and sacrifice, but because Easter is, first and foremost, a celebration of life! New life sprouting up everywhere after a long hard winter…think chicks, baby bunnies and lambs, daffodils, primroses, crocuses,…so many colours and joy!!! Loving it!

We celebrated by having a traditional Easter Sunday roast.  A slow roasted leg of lamb with rosemary and garlic and roast tatties. It was worth the 4 hour wait!
