Simple Cupcake Recipe

Cupcakes are the cutest sweet treat ever and so simple to make! For all you wannabe domestic goddesses out there, this is a recipe I guarantee you can’t mess up. Plus, these are perfect for afternoon tea with the ladies! Makes about 12.


100g butter

100g sugar (white/brown)

100g self raising flour

2 eggs (medium sized)

What you’ll need:

A big mixing bowl

A small microwave proof bowl

A measuring jug or scales

A mixer or a wooden spoon and a strong arm! (I would recommend the mixer)

A knife

A spoon

A spatula

Cupcake tin + optional cupcake cases

  • Preheat your oven to 180˚C.
  • Cut the butter into rough cubes. Place in a bowl and microwave for 15seconds until butter is soft. Then place melted butter in big mixing bowl with sugar and mix. Don’t worry if it looks a bit gooey and worryingly yellow at this point. It’s fine.
  • Add the flour and eggs little by little to the sugar/butter combo. Mix till smooth.
  • If you’re not using cupcake cases then grease the cupcake tin with either the now congealed butter from the first bowl you put in the microwave (it sounds gross but this is the easiest option) or with a bit of butter/butter wrapping.
  • Place the cupcakes in the oven for 12mins. Take a knife and pierce through the middle of one to check they’re done. If the knife is clean then they’re ready! Enjoy!
